Copenhagen’s liveability is tied to how it eats and grows. This bike tour explores the Danish way of life by connecting urban development with culinary history. We begin with urban foraging and an elderflower drink, then ride to Islands Brygge to craft traditional smørrebrød. At Banegaarden, we examine the Nordic Food Manifesto. We then move to Vestre Cemetery to explore ‘hygge’ and community over coffee and a Danish pastry. We conclude at the historic Carlsberg site and Meatpacking District.

Cycling Proficiency: This tour is for confident cyclists. That said, the route mainly follows bike routes, and avoids heavy car traffic.
Authentic Equipment: We use classic, understated Danish city bikes to ensure you blend in with local commuters.
Weather Policy: The tour runs in all weather conditions (rain or shine). Please dress accordingly; we provide high-quality rain ponchos if needed.

The Shop (Start): Meet at our historic center location for bike fitting and a briefing.
Kongens Nytorv: Urban foraging and a local elderflower drink served from a transformed telephone kiosk.
Inderhavnsbroen: Kissing Bridge view. A look at the iconic Nyhavn harbor and Copenhagen’s modern waterfront reconversion history.
Islands Brygge: Hands-on Smørrebrød workshop and tasting in a repurposed industrial public space.
Banegaarden: Discussion of the New Nordic Manifesto at a sustainable urban farm.
Vestre Kirkegård (Vestre Cemetery): Coffee and Danish pastry tasting, exploring ‘Hygge’ and the Danish sense of community in a final resting place.
Carlsberg Brewery Site: Brief history of brewing, science, and the city’s expansion.
The Meatpacking District (Kødbyen): Explore gentrification, industrial heritage, and the social realities of “Brown” vs. “White” Meatpacking.

This bike and tasting tour explores the Danish way of life through the city’s urban transformation and its culinary history. We move at a low pace, focusing on community, social history, and the unique behaviors and nature that shape this capital.

Urban Foraging & Michelin Stars
We begin at Kongens Nytorv. Over a local elderflower drink served from a repurposed public telephone kiosk, we introduce the Danish tradition of urban foraging. We examine landmarks like the Royal Theater and Hotel D’Angleterre, discussing how the city balanced Michelin-starred innovation with the tradition of the Rød pølse (red sausage) hot dog stand, an icon featured in the series The Bear.

Nyhavn & Harbor Reconversion
From there, we cross the Inderhavnsbroen (Kissing Bridge), leaving Nyhavn behind to analyze the city’s evolving harbor front. We discuss how spaces like Paper Island and Reffen street food markets demonstrate Denmark’s approach to sustainability and “balanced capitalism,” creating spaces for people to enjoy even in the rain.

Islands Brygge & The Smørrebrød Workshop
At Islands Brygge, you will see firsthand how dirty industrial canals were transformed into crowded, accessible harbor baths by architects like Bjarke Ingels. This stop focuses on traditional Danish food culture. Here, we pause for a hands-on experience: crafting and eating your own traditional smørrebrød (rye bread, butter, and massive toppings). We discuss the Madpakke (meal box) tradition and the importance of the family dinner in Danish culture.

Sustainability & The New Nordic Manifesto
The route then moves to Banegaarden, a sustainable urban farm built from recycled shipping containers. This location frames our discussion on the New Nordic Manifesto and Denmark’s policy-driven shift towards local, seasonal, and minimal-waste food consumption.

Hygge in the Cemetery: Vestre Kirkegård
Next, we step into the vast, green landscape of Vestre Kirkegård (Vestre Cemetery). Over a cup of lightly roasted, fair-trade coffee and a classic Danish pastry (Wienerbrød), we explore how Danes relate to death. In many cultures this space is taboo, but here, it is a place for reflection and connection that remains part of the community. We dive deep into the concept of Hygge—exploring calmness and stillness—and discuss the balance between Danish individualism and collective social support.

Brewing, Science & Gentrification
After a pause at the historic Carlsberg brewery site, we finish the tour in Kødbyen, the Meatpacking District. We analyze the contrasts of a growing city, examining controlled gentrification, industrial heritage, and how the gritty social reality of the district’s drug scene coexists with the city’s dynamic dining and nightlife.
